Baked cinnamon apple chips

Baked cinnamon apple chips

These are pure apple, sliced thin and dried out slowly in a low oven until they crisp up. Cinnamon makes them taste like more of a treat than they are. No fat and no need for added sugar, because slow baking concentrates the apple’s own sweetness. Great for a sweet-tooth moment and they travel well in a bag.

They take a while in the oven but it’s all hands-off time.

Makes 2 to 3 snack portions. No fat to speak of, about 110 kcal a portion.

Phase & care: Peeled apple, cinnamon and lemon are all P1 for me. I peel the apple (I’d rather not deal with the skin), which also makes these gentler.

Ingredients

  • 2-3 firm apples, peeled
  • 1 tsp cinnamon
  • Optional: a squeeze of lemon to keep the colour

Method

  1. Heat the oven low, around 100-120C.
  2. Peel and slice the apples very thin (a mandolin helps). Toss with cinnamon and a little lemon.
  3. Lay flat on lined trays, not overlapping.
  4. Bake 1.5 to 2.5 hours, turning once, until dried and crisp. Thinner slices crisp faster.
  5. Cool completely, they crisp up more as they cool. Store airtight.

Slice them as thin and even as you can. Thick or uneven slices stay leathery in the middle while the edges burn.

Stepan’s rule: Slow heat concentrates natural sweetness, so you don’t need to add sugar. Dried fruit chips are a sweet snack the pancreas doesn’t have to pay for in fat.
