If you have been eating oatmeal with banana every morning since your discharge, and most of us have, this is the same safe breakfast in a different direction.

Phase & care: P1. Oats and carrots are gentle-phase foods, and there is nothing here that needs to wait. Tolerance varies per person.
Ingredients
- 50 g (half cup) rolled oats
- 300 ml (1.25 cups) low-salt vegetable broth
- 1 small carrot, grated
- 1 tablespoon fresh parsley or chives, chopped
- 1 tablespoon low-fat cottage cheese, optional
- Salt to taste
Method
- Put the oats, broth and grated carrot in a small pan over a medium heat.
- Stir for 5 to 7 minutes, until it thickens and the carrot has softened into it.
- Off the heat, stir in the herbs. Add the cottage cheese if you want it creamier, and salt at the end.
Broth instead of water is the entire trick. Water gives you wet oats, broth gives you something that tastes cooked.
Other gentle additions that work: a spoon of peas late in the cooking, a little grated zucchini without the skin and centre, a few strands of soft-cooked spinach.
This reheats in the pan with a splash more broth.
Stepan’s rule: the food I actually keep eating is the food that has more than one version. Sweet oats got me through the first month. Savoury oats are why I can still face oats three years later.
