Phase & care: P1 for potato, carrot, celery, dill, lemon juice, low-fat milk and egg white. The Czech original usually has onion, mushrooms, butter and cream. I leave all four out.
Czech dill soup is a winter classic. The standard one is a pot of potatoes, dill, cream, an egg and a splash of vinegar. It tastes like a cold evening in November.
I kept the dill, the potatoes and the egg. The cream, the butter and the mushrooms are out.

Ingredients
- 600 g (1 lb 5 oz) potatoes, peeled and diced into 1.5 cm (1/2 inch) cubes
- 150 g (5 oz) carrots, diced small
- 1 celery stalk (about 50 g / 2 oz), diced small
- 1 litre (4 cups) water or fat-free vegetable broth
- 250 ml (1 cup) 1.5% milk
- 3 tablespoons fresh dill, chopped (about 15 g / 1/2 oz)
- 1 tablespoon lemon juice
- 2 egg whites
- Salt
Method
- Put the potatoes, carrots and celery in a pot with the water or broth and a pinch of salt. Bring to a boil, then simmer for 15 minutes, until the potatoes are soft.
- Mash about a third of the potatoes against the side of the pot with a fork. This thickens the soup without flour or cream.
- Add the milk and heat until steaming. Don’t boil.
- Beat the egg whites lightly. Pour them in a thin stream into the hot soup while stirring slowly, so they set into fine threads.
- Take the pot off the heat. Stir in the dill and the lemon juice. Taste and add salt.

Notes
Add the dill at the very end. Boiled dill loses its smell, and the smell is the point.
If your phase allows it, a poached whole egg per bowl is the traditional way. A whole egg adds about 5 g of fat, so count it against your budget.
The soup keeps 2 days in the fridge. Reheat gently, without boiling.
Stepan’s Rule: the cream was never the soup. The dill was.
